Moisture and humidity are the worst things for your gingerbread house, so set it in a cool, dry place. It's a good idea to cover it with plastic wrap when it isn't on display. As long as the house is protected and sealed most of the time, it can be eaten weeks after it is made.
If you don't intend to eat your house, you can save it to decorate your table for years to come. In a well ventilated area, spray it with a clear varnish. Let it dry and then spray it again. You now have a permanent centerpiece!
