INGREDIENTS
3/4 cup brown sugar
1/2 cup butter or margarine (softened)
2 eggs
1/4 cup molasses
3 1/4 cups self-rising flour
2 tsp. ginger
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
Optional
Raisins for the face
Frosting for decorating
Drinking straw to make holes for hanging on the tree
DIRECTIONS
In large bowl, beat the sugar & butter until well blended. Add the eggs and molasses. Stir in remaining ingredients. Cover and chill the dough for 1 hour.
Roll the dough on a well-floured board or the countertop until 1/8-inch thick. Use your cookie cutters to cut out shapes. Place on a greased baking sheet. Bake for 8-10 minutes at 350 degrees. Leave on the cookie sheet for a couple of minutes before transferring to a wire rack to cool. Store in an airtight container. Separate layers with sheets of waxed paper.
Makes about 24 cookies.
Tips:
You can add raisins for the eyes and mouth before baking by pressing them into the dough.
You can use your favorite frosting to decorate the cookies after they have cooled.
If you are going to hang cookies on the tree, use a drinking straw to press a hole through the top before baking. After the cookies are cooled, thread ribbon or yarn through the holes and tie in a knot. Attach a regular ornament hook through the loop of ribbon.
